Olive production

Our one-hectare olive grove, home to 180 trees, offers stunning views on the hills and church of Potenza Picena. In late winter, we start pruning and fertilising the olive trees. By May, the trees are covered in small blossoms that develop into olives over the summer. October is our busiest time, as we hand-harvest all our olives. An electric shaker gently drops the olives on nets that are put under each tree. The olives are then collected into creates, harvesting around 450 kg per day. It is hard but very rewarding work. The entire harvest takes about two weeks.

From Olives to Oil

At the end of each harvest day, we take the crates of freshly picked olives to the nearby village for processing. That same night, our olives are pressed into olive oil under a low temperature. This cold pressing technique is essential for producing high quality extra-virgin olive oil, as it preserves the oil’s natural aroma, flavours, and nutrients. The next day, we take the olive oil back to our Agriturismo. We filter the oil to extend shelf life, enhance clarity, and ensure a consistent flavour. Every bottle is then carefully filled, labelled, and packaged by hand.

Sustainable production

We farm organically, and use sustainable and regenerative farming practices. Once a year, we fertilise the base of the olive trees with organic compost. In spring and summer, the trees are sprayed with natural minerals and limestone to boost the leaves and give protection for the sun. To prevent damage from the olive fruit fly (bactrocera oleae), we hang pheromone tents in the trees to monitor their presence, and then put organic traps in the trees that capture the flies. As a regenerative practice, we make wood chips from all our tree prunings and put the wood chips under the trees. This improves the soil structure, moisture levels and microbial activity, supporting a healthy soil ecosystem.
